Al Maidah : Kitchen Theory Feast for the Senses

Brief

As Saudi Arabia opens its culture to the world, food has become one of its most powerful storytelling tools. Through the Ministry of Culture and the Culinary Arts Commission, the Kingdom is using cuisine to share a richer view of its heritage, regional diversity and future-facing cultural ambition.

Al Maidah was commissioned as a first-of-its-kind multi-sensory culinary experience inside the Saudi Feast Food Festival. The ambition was to reframe Saudi cuisine as culture, memory, craft and connection, not just food on a plate.

The brief was to ignite every sense, honour Saudi ingredients and traditions, and create an experience that allowed guests to understand the Kingdom through taste, scent, sound, story and shared ritual.

Solution

We designed, built and produced the full Al Maidah journey end-to-end, creating a four-room immersive passage through Saudi cuisine.

The experience moved from reception into the Botanical Apothecary, exploring native plants, historical beverages and the natural ingredients behind Saudi culinary traditions. From there, the Sensory Gallery invited guests to touch, smell and see the textures and aromas of the Kingdom’s cuisine.

The journey culminated in the Al Maidah Dining Room, a communal six-course experience curated by chef Jozef Youssef of Kitchen Theory, UK, alongside leading Saudi chefs. Served around one shared table in true Saudi tradition, the experience transformed a meal into a cultural encounter.

    Flavour is multisensory. Research in gastrophysics shows that what we see, hear, smell and touch can shape how food tastes, how it feels and how deeply it is remembered. For Al Maidah, the insight was to use the senses as cultural language, helping guests understand Saudi cuisine through memory, emotion and embodied experience.

    We created a four-room sensory journey through Saudi cuisine, moving from heritage and native ingredients to botanical drinks, tactile discovery and communal dining. In the dining room, live artistry unfolded across the table, with a real artist drawing in real time and their work projected onto the dining surface. Saudi tradition, told as theatre.

    Technology

    Projection mapping, sensors, scent triggers, custom software and synchronised audio were extended across all four rooms, not as spectacle for its own sake, but as tools of sensory storytelling. The technology disappeared into the environment, allowing taste, ritual and culture to lead.

Al Maidah set a new benchmark for immersive hospitality in the Kingdom, showing how food can become a powerful vehicle for cultural storytelling, emotional connection and national identity.

Commissioned at the highest cultural level, the experience translated Saudi heritage into a multi-sensory journey that guests could taste, touch, hear, see and remember long after leaving the table.
